first chop your onion, potato and carrot and tomato. Add some olive oil to your pan add chopped onion ( garlic first if you have it ) cook until onion is soft. Add potato and carrot...stir it not to much but so it doesn't burn..add the chickpeas ( no can water) you can add a little fresh water or tomato sauce now...make sure all is hot. Add chopped tomato and olives. It is almost ready don't cook the tomato too much...just till hot. Put these vegetables over your cooked rice or pasta. Enjoy

has completed a marathon journey and alit in TN. Thanks all bugs for your good wishes. A stand-by airline seat (in business class no less!) gained on the 1st attempt, car on the docks unscathed, amazingly avoided having my car being rear ended in L.A., horrific lightning bolts dodged in Arizona and New Mexico, Tornados in Texas, torrential rains and flash floods in Oklahoma and no flat tires or speeding tickets...CA to TN in 3 days!!!
